How to store Speck
Remove the Speck from the vacuum package and leave it to rest for several hours at room temperature before you enjoy it. We recommend storing bacon in the lower compartments of the refrigerator where the temperature is not too low. Never store speck too close to products with a strong smell such as onions, etc.
How to serve Speck
Cut in strips or thin slices? With our without the spicy crust? Whether you prefer the fine and elegant way or a more rustic and hearty style is simply a matter of personal taste. For those who appreciate a stronger flavour we recommend the traditional way of serving Speck – first cut off a slice about two to three cm (one inch) thick and then cut it by hand into thin sticks on a slicing board. People from Alto Adige like to use a sharp pocket knife for this purpose. If you prefer your Speck mild and tender, cut it in paper thin slices and remove the spicy crust.
