Spaghetti Carbonara

For 4 people


  • 320 g Spaghetti
  • 100 g savory ham
  • 1 tbsp of butter
  • 200 ml of cream
  • 3 egg yolks
  • 2 tbsp of grated parmesan cheese
  • salt
  • black pepper from the pepper mill


  • 40 g of roast ham strips
  • 1 tbsp chives, finely chopped
  • 2 tbsp of grated parmesan cheese


Spaghetti: about 8 minutes


  • Boil the spaghetti in salt water until almost tender (cooking time see packaging).
  • In the meantime cut the ham into strips and lightly roast in butter.
  • Stir cream with egg yolk, parmesan cheese and salt.


  • Drain the spaghetti and add to the ham in the pan.
  • Add the cream-yolk mass and mix thoroughly.
  • Season with pepper, garnish with ham strips, chives and parmesan cheese and serve.


  1. Seasonal salads are the ideal side order.
  2. Instead of savory ham you can use gammon ham, Italian Coppa or raw ham.
  3. Add raw, finely cut courgettes to the spaghetti.
