Ham platter

Thinly slice the ham with the slicing machine and place it nicely on a platter. You can also cut the ham by hand. The traditional way to cut ham by hand is in small strips. Place the ham on a platter and serve with tomatoes, pickles, horseradish or similar.

Ham sandwich

Cut the traditional brown bread "Vinschger Paarl" into halves and fill it with thin ham slices. You can add cheese, pickles, tomato slices, horseradish or similar to your sandwich.

Ham dumplings

Ingredients for 4 people
  • 4 stale bread rolls
  • 1.5 glasses of milk
  • 100 g Recla Speck
  • 2 eggs
  • 1/2 onion
  • 2 tbsp flour
  • 2 tbsp oil
  • butter, parsley, salt, pepper, nutmeg
Chop the bread into small cubes and moisten with a glass of lukewarm milk. Chop the ham into tiny cubes and separate them apart. Fry the chopped onion with the fatty ham pieces in oil with a knob of butter until brown; let it cool down and add to the bread. Add the remaining ham and a handful of chopped parsley, flour, salt, pepper and nutmeg and mix the bread thoroughly. Beat the eggs and half a glass of milk together and pour over the bread. Knead thoroughly with your hands. Form 8 dumplings of equal size with wet hands. Put them into boiling salt water and boil slowly for about 20 minutes.
