White onion soup with ham

For 4 people


  • 100 g of white onions
  • 30 g butter
  • 125 ml of dry white wine
  • 2 cloves of garlic
  • 750 ml of beef bouillon or water
  • 200 ml of cream
  • tbsp of cold butter
  • 1 teaspoon of white wine vinegar
  • pepper from the pepper mill
  • salt

Fried onion rings

  • 1 large onion
  • flour for dusting
  • cooking fat
  • salt


  • 20 g of roast ham strips
  • 1 tbsp marjoram leaves
  • 8 ham slices
  • 8 breadsticks


Cooking time: about 15 minutes
Preparation time: approx. 35 minutes


  • Peel the white onions, cut into dices and sauté in butter.
  • Deglaze with white wine and boil until almost all the fluid is absorbed.
  • Peel the garlic cloves, chop coarsely and add.
  • Deglaze with bouillon or water and let boil for about 5 minutes.
  • Add cream and boil for about 10 minutes.
  • Foam the soup with cold butter in the mixer, and season with white wine vinegar, pepper and salt.

Fried onion rings

  • Peel the onions, cut into slices (not too thin) in order to form rings. Sprinkle with flour and tap off any excess. Fry the onion rings in hot cooking fat until golden brown; tap off on kitchen paper and add some salt.


  • Put the soup into a cup and garnish with roast ham strips, fried onion rings and marjoram leaves.
  • Serve with ham slices and breadsticks.


  1. Ideal side orders are cheese or ham doughnuts, Tyrolean "Tirtlan" or puff pastry.
  2. Serve roast sausage slices with the white onion soup. Instead of beef bouillon you use poultry soup.
