Cooked specialities

We are constantly looking for the best quality even for our cooked hams. The peculiarity of our method consists of a light smoking and a refined spicing, which give our hams an extraordinary delicacy and character. One of the most important production phases is the first, i.e. selection. At Recla, we carefully select the raw materials: each thigh is evaluated by weight, fat content and pH value. On the basis of these parameters, it is destined to become Speck Alto Adige PGI or one of the cooked specialities. The quality of the final product always starts from a careful selection made by one of our experts.

Pancetta (Bacon)

Recla selects the most suitable bacons for curing or cooking. Our smoked bacon comes from a selection of leaner bacons, which are then salted with a secret recipe of salt and spices, lightly smoked with beech wood, and cured for the required time. The final product is aromatic and with an unique character.

Stewed bacon

Recla selects the most suitable bacon for seasoning or for cooking. The bacon is lightly spiced and delicately cooked in steam ovens. The final product is ideal for use as ingredient for many tasty recipes.

Our suckling pig is made from pork loin and bacon. The product is gently roasted and seasoned with our spice recipe.

South Tyrolean Specialities

Tyrolean Cooked Ham

This South Tyrolean speciality is obtained by steaming and light smoking with beechwood. It is flavoured with a spice recipe that gives a unique and typical aroma.

In order to produce our Praga Ham, we select the thighs that make it possible to obtain a juicy meat. The product is delicately steamed, seasoned with spices and smoked with beechwood. This gives Praga Ham a unique flavour and scent.
