Cooked hams, slightly smoked and delicately spiced
We are constantly looking for the best quality even for our cooked hams. The peculiarity of our method consists of a light smoking and a refined spicing, which give our hams an extraordinary delicacy and character. One of the most important production phases is the first, i.e. selection. At Recla, we carefully select the raw materials: each thigh is evaluated by weight, fat content and pH value. On the basis of these parameters, it is destined to become Speck Alto Adige PGI or one of the cooked specialities. The quality of the final product always starts from a careful selection made by one of our experts.
